The story begins with Thomas Studd, a young chef from Shoreditch in east London, who came to Manchester to pursue his culinary dreams. Thomas started his career in the city's kitchens, working his way up to become one of the most respected chefs in the city. In 1867, he and his wife, Sarah, opened their own Chop House on Cross Street, opposite the original Town Hall and the Cross Street Chapel. Thomas's Chop House quickly became a popular gathering place for the city's elite, where business deals were made and friendships were forged over hearty meals of steaks, chops, and sandwiches.
