Who We Are
At The Half Moon Lane Bakery, we're passionate about creating the freshest, highest-quality bread for our customers. Our bakery is built on a simple principle: if it isn't amazing, don't make it. We're dedicated to producing bread that not only tastes incredible but is also made with the finest ingredients and a focus on quality over quantity.
Our Bread Philosophy
We make our bread throughout the day, rather than through the night, to provide our customers with the freshest bread possible. This approach also allows our bakers to enjoy a better quality of life, without the need for overnight shifts. While this means our shelves might not be fully stocked first thing in the morning, we believe the end result is well worth the wait.
Our Ingredients and Techniques
We're committed to using only the finest ingredients, including Bioreal Organic Yeast, organic flour from Shipton Mill, and a range of organic seeds and grains. We've developed our own natural sourdough starters, which we've lovingly named Johnson, Snow White, and Dominic. Our bread is made completely onsite, shaped by hand, and baked in our handmade ovens imported from a lovely family in Belgium. Each oven uses no more power than a household kettle, yet produces bread of a quality that matches any large conventional deck oven.
Our Team
Our team of bakers have been trained from scratch to meet the high standards and practices needed to create bread of distinctive flavour and texture. We've focused on recruiting local people who live in the surrounding roads, many of whom were keen home bakers but had no fixed ways of thinking to hold them back. We're proud of our team's dedication to producing exceptional bread, and we're grateful for the expertise and guidance of our mentors, including Maurice Chaplais from Maison Chaplais, Wayne Caddy from the School of Artisan Food, and the team at Le Cordon Bleu London.

We're unapologetically committed to taking the time needed to create truly exceptional bread. Whether it takes three days to make a loaf, or we need to soak flour and grains overnight to release their natural flavours, we're willing to put in the effort to produce bread that's not only delicious but also better for you. Our slow fermentation processes ensure that our bread is more easily digested, and we're proud to say that our customers can taste the difference.
